The smoky fish soup of Cullen, a fishing town on the Moray coast. Undyed smoked haddock, floury potatoes and onion are simmered in milk and finished with a generous piece of butter melting on top.
Ingredients
- 400 g undyed smoked haddock
- 50 g salted butter
- 1 medium onion, finely chopped
- 1 leek, white part only, sliced
- 500 g floury potatoes, peeled and diced
- 300 ml water
- 600 ml whole milk
- 100 ml double cream
- 1 bay leaf
- Sea salt, black pepper and chopped chives
Method
- Put the haddock in a wide pan with the water and bay leaf, bring to a gentle simmer and poach for 4 minutes. Lift the fish out, keep the liquid, and flake the flesh, discarding skin and bones.
- Melt the butter in a heavy pot over medium heat and sweat the onion and leek for 8 minutes until soft, without letting them colour.
- Add the potatoes and the reserved poaching liquid, then simmer for 12 to 15 minutes until the potatoes are tender.
- Mash a few potato pieces against the side of the pot so the soup thickens naturally.
- Pour in the milk and cream, return the flaked haddock and warm everything through gently, never letting it boil.
- Season with salt and pepper, scatter over the chives and serve each bowl with a small piece of butter melting in the middle.
